Traditional handmade shmurah matzah is carefully watched — "shmurah" means "watched" in Hebrew — with ingredients monitored from harvest. These round, hand-shaped matzot resemble those baked by the Children of Israel leaving Egypt, making them especially fitting for both Seder nights.
